For a delicious hot dinner nothing can be as comparing to crock pot pacific pot roast recipe. When I was new at cooking, I tried this as my very first recipe and whole family including my cousins really fell in love with this dish. I will highly recommend you to try this at your home for a friends gathering or family dining.

Ingredients

  • 4 lb pot roast of your choice
  • 1 onion thin sliced
  • 2 tbsp vegetable oil
  • Beef broth
  • 5 zucchini sliced
  • 2 carrots cut into chunks
  • 1 red bell pepper rings sliced
  • 6 potatoes pilled off and divided into 2 equal pieces
  • 2 bay leaves
  • 1/4 tsp black pepper
  • 1 1/2 tsp salt or to taste
  • 1/4 cup of water
  • 2 tbsp all purpose flour

Instructions

  1. Neat and clean the meat and discard the fat and unnecessary parts.

  2. Use a large skillet and on medium high flame add 2 tablespoons of oil. Add roast and fry it from all sides until it turns brown in color. Cut the roast in small pieces and shift it to slow cooker.

  3. Add a little vegetable oil into skillet and on medium flame sauté the onion so it gets tender. It will not take more than 6-7 minutes. Transfer the onions over the beef in slow cooker.

  4. Now add zucchini, red pepper, potatoes, beef broth, bay leaves and carrots. Cover it and cook on low for about 8 hours. If in hurry cook it for 4 hours on high flame or until it is well cooked.

  5. Use a warm platter to place the beef and vegetables.

  6. Take a saucepan and on medium flame strain the liquids by simmering. If it is having more liquids, boil it until the flavors get concentrated.

  7. Take a bowl and mix the water and all purpose flour together. Stir it continuously so it becomes a smooth paste.

  8. Now shift this to hot liquid and simmer it together. Gently stir and cook until it thickens well. Check the seasoning. Mix the pepper and salt. Serve it hot with the sauce accompanied by vegetables and pot roast.

Recipe Notes

For a different taste you can use red wine of your choice instead of beef broth. Also, you can use pot roast of your choice preferably bottom round, lean chuck and others.

Choice of vegetables shouldn’t be limited. You can use tomatoes, celery, mushroom or whatever you prefer to eat in vegetables.
