Ingredients

  • 4 Pieces of 4 oz chicken breasts
  • 1 lbs of angel hair pasta
  • 7 Pieces Roma tomatoes average size
  • 4 tbsp extra virgin olive oil
  • Kosher salt
  • Basil leaves
  • 2 Cloves Of Garlic very finely chopped
  • 1/2 Cup of tomato sauce
  • 1 Cup Of balsamic vinegar
  • 1 tbsp granulated sugar
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Preparing tomato salad

    Wash tomatoes in running water and sliced into 1/4 inch of pieces. Save the entire tomatoes juice comes out while slicing and store in a separate bowl. Wash basil leaves and give it a strip size cuts.

  2. Now, in a bowl add the sliced tomatoes with basil leaves. Also add leftover tomatoes juice, 2 tablespoon olive oil, black pepper, and salt and stay it hold for at least 2 hours.

  3. Balsamic Glaze

    Take a small pan on very low flame and add vinegar and sugar into it. Simmer it so we have thick sauce at the end. Now, turn off the flame and let it sit at room temperature.

  4. Pasta

    Boil the pasta as it is written in direction of packet. Drain out the water and shift the pasta to a bowl.

  5. Making tomato salad

    Take a heavy saucepan and heat it on medium flame. Heat remaining oil in this saucepan and sauté garlic until it becomes tender and very soft. Make sure it becomes golden not brown.

  6. Add the tomato salad on high the flame. Stir and cook. Heat a pan on medium flame and pour the tomato sauce. Once it comes to boil add the pasta and toss it so they mix up well. Turn off the flame when they are well mixed and cooked. Shift it to serving bowl individually and garnish with balsamic glaze.

  7. Chicken breasts

    Now use the washed and dried chicken breasts. Season it properly with black pepper and salt.

  8. Grill the chicken breast from both the sides for 4 minutes or it reaches the temperature to 165 degrees F.

  9. Sliced the chicken breasts into strips or with an angle of 45 degrees for a nice cut and get it on the serving bowl on the top of pasta.

    It is here now to serve hot with a memorable taste.

Recipe Notes

Using petite diced tomatoes followed with garlic, oregano and balsamic glaze (store bought) with a mix of fresh and dried basil can also turns out to be a perfect taste and saves your time too.

Removing the chicken from this very same recipe and instead of Angel hair pasta use Romano pasta and it will bring out an unbelievable and delicious vegetarian taste.
