Sweet potato salad recipe

- 2.5 lbs or 1 kilogram sweet potatoes peeled and cut
- 1/2 tsp of cumin powder
- 1/2 tsp of paprika powder
- 1/2 tsp of coriander powder
- A pinch of cinnamon powder
- A pinch of ginger powder
- A pinch of black pepper powder
- A pinch of cayenne pepper
- 2 tbsp of lemon juice
- Olive oil
- Kosher salt
- Black pepper
- 1 clove of garlic finely minced
- 4 tablespoon of toasted almonds
- 2 tablespoon of dried cranberries
- Fresh parsley chopped and minced
- Cilantro minced
- Fresh mint leaves
Preheat your oven to 425 degrees F.
Take a medium-sized baking sheet and spray over it using a non-stick cooking spray evenly. Now peel and cut the potatoes into 3/4 size cubes and transfer it to the baking sheet.
Now, sprinkle some salt and pepper over the potatoes and season with the olive oil. Toss it well so each potato has nice coat of the seasoning. Make an even layer of the potatoes.
Shift the potatoes to oven and place it in the middle of the oven. Let it roast for 10 minutes then toss the potatoes and roast for another 10 minutes or until the potatoes becomes tender and soft.
While potatoes are roasting, take a mixing bowl and add cumin powder, 1/2 tsp of paprika powder, 1/2 tsp of coriander powder, a pinch of cinnamon powder, a pinch of ginger powder, a pinch of black pepper powder, a pinch of cayenne pepper, 2 tbsp of lemon juice, 3 tablespoon of olive oil, 2 tablespoon of dried cranberries, 4 tablespoon of toasted almonds and minced garlic. Whisk it gently so all of them mix well and season with the pepper and salt. Set it aside.
When the potatoes are done take them out and shift it to a bowl and pour the dressing over the potatoes and toss them so they get nicely coated with the dressing.
Let the potatoes sit for 5 minutes so they absorb the dressing flavor. You can toss them for a few times.
Finally, garnish the potatoes with the chopped fresh parsley, cilantro and mint leaves.
You can reserve the potatoes in a refrigerator and use it on the other day but you must warm it before you are going to use it.
For adding tangier flavor you can add orange juice and orange zest while preparing dressing for the potatoes. It is always good if you use fresh lemon and orange juice to this recipe.
