  • 900 gram or 2 lbs of washed and dried sweet potatoes
  • 4 tbsp of butter (melted)
  • 1 egg white
  • A pinch of ground ginger
  • A pinch of ground nutmeg
  • 1 inch cinnamon
  • 1/2 cup of brown sugar
  • 4 tbsp of milk
  • Cooking spray or 1 tbsp of olive oil

Ingredients for toppings

  • 1/2 cup of brown sugar
  • 1/2 cup of wheat flour
  • 1/4 cup of melted butter
  • 1/2 cup of chopped pecans

Instructions

  1. Start off preheating the oven to 350 degrees. Take a sheet pan and cover with the foil. Spray the cooking spray and add the potatoes using a fork by pricking them and adding to the pan.

  2. Let the potatoes bake from 45 minutes to 1 hour then off the flame and transfer this to a plate so it cools down easily.
  3. When the potatoes come to normal temperature cut them open. Scoop out the insides of the potatoes and shift to a big bowl.

  4. Add milk, brown sugar, egg, 4 tablespoon of melted butter and all the spices to the same big bowl. Mix everything well then using a blender or a food processor mash everything until it comes to the smooth and soft mixture.

  5. Take a medium sized pan and grease it with olive oil or cooking spray then add the sweet potatoes to this pan and spread it evenly.

  6. Take another bowl and add melted butter, brown sugar, chopped pecans, pecans, and flour. Mix it nicely and sprinkle it evenly over the sweet potatoes as a topping. Let it bake for 25 to 30 minutes or until toppings turn golden in color.
