Making the dish

  • 3 cups of black beans cooked
  • 1 1/2 lbs sweet potatoes diced
  • 4 cups of vegetable broth or water
  • 1 medium sized onion chopped
  • 10 cloves of garlic chopped
  • 2 tbsp canola or peanut oil
  • 2 tbsp ground cumin
  • 4 tbsp chili powder
  • 2 tbsp discarded seeds and chopped chipotles en adobo stem
  • 28 oz or a can of diced tomatoes
  • Kosher salt

To garnish

  • Tortilla chips
  • 1 medium sized lime cut into 6 equal pieces
  • Green onions chopped
  • 1 jalapeno sliced
  • Crumbled feta


  1. Use a heavy and large Dutch oven and heat the oil on medium flame. When the oil heats up add the onion and sprinkle kosher salt. Stir and fry until the onions gets tender and soft. (It takes approximately 5 minutes)

  2. Add the ground cumin, chili powder, garlic and chipotle. Give it a nice mix. Cook everything for 2 minutes.

  3. Turn the heat to high. Now, add sweet potatoes, vegetable broth or water, tomatoes and a pinch of salt. Wait until the water starts bubbling.

  4. Once the water comes to boil turn the heat to medium low flame. Add the beans and mix everything gently.

  5. Simmer it half covered. It will take 30 minutes to cook everything and to get a thicken gravy. Stir occasionally.

  6. Check for seasoning.

  7. Sift it to serving bowl. Garnish with the ingredients.

Recipe Notes

To avoid potatoes and beans get mushy you need to adjust the heat and simmer and cook the potatoes and beans on low flame. Avoid cooking it on high flame.

Use a wooden spoon to check if there are any brown bits remained at the bottom to have a flavored taste. Scrape up the brown bits from the dish.

You can cover and put in the refrigerator for 3 days or store in the freeze for up to 3 months.
