  • 2 lbs of baking potatoes (preferably large size)
  • 4 tbsp of soft butter
  • 3/4 cup of sour cream
  • Kosher salt
  • Paprika
  • Shredded cheese
  • Black pepper to taste


  1. Scrub your baking potatoes and remove all the imperfections from it. Use a kitchen towel to pat dry the potatoes then take a fork and make small holes for 2 to 3 times on both the sides.

  2. Use olive oil and kosher salt to rub it evenly on the potatoes. You can also use a coarse salt in a medium size bowl and coat the potatoes into it. If you like soft skin of the potatoes after baking then discards coating in the coarse salt.

  3. Shift the potatoes to an oven rack and place it in the center then bake it at 350 degrees F for 45 minutes.

    (To check the doneness pierced using a fork. When the potatoes are done they are tender and easily can be pierced.)

  4. Increase the temperature to 425 degree F. Now, cut the potatoes into two equal pieces. Scoop out the potatoes from inside and mash it.

  5. Take a mixing bowl and add cream, kosher salt, pepper and butter. Beat it well until all the mixture becomes creamy.

  6. Use the mashed potatoes that we scoop out from inside of the potatoes. Sprinkle paprika and shredded cheese and pile it well to the filling part of potatoes.

  7. Now shift this back to oven and bake it for 15 minutes on until you see cheese melting down completely.

Recipe Notes

You can top the potatoes with some chili followed by cheese and paprika. This will enhance the texture as well as increase the taste. Adding some fresh chives or thyme also can be used as a variation.

For a different texture and change the taste, you can top the potatoes with the finely sliced onions followed by cheese and paprika.
