Ingredients

For marinade

  • 4 lbs or 900 gram of chicken pieces
  • 2 tablespoons of ginger garlic paste
  • 1 tablespoon of lemon juice
  • Salt

For curry

  • 4 medium-sized chopped onions
  • 4 green chillies slit
  • 1 teaspoon of cumin seeds
  • 3 bay leaves
  • 10 cloves of garlic
  • 1 1/2 inch of ginger
  • 5 green cardamoms
  • 10 black peppers
  • 5 cloves
  • 4 medium-sized chopped tomatoes
  • 1/2 teaspoon of turmeric powder
  • 1 teaspoon of red chilli powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of garam masala or allspice powder
  • Oil as required
  • Salt to taste

For tempering

  • 1 tablespoon of clarified butter
  • 2 green chillies slit
  • 1/2 inch of fried grated ginger
  • 2 tablespoon of coriander leaves to garnish

Instructions

  1. Wash the chicken pieces in running water then wash using kitchen towel so no moisture remains on the chicken. Rub the chicken pieces with ginger garlic paste from all sides.

  2. Sprinkle lemon juice and salt over the chicken. Cover the bowl and let the chicken pieces to marinate for next 30 minutes or overnight in a refrigerator.

  3. Use a blender or a food processor to make fine paste of chopped onions, garlic, ginger and green chillies. Add a little water, if required.

  4. Take a medium-sized saucepan and heat 2 tablespoons of oil. Add the cumin seeds and when they start splattering add the bay leaves, cinnamon, green cardamom, black pepper and cloves.

  5. When you can smell an aromatic smell coming out from the spices add the fine paste of chopped onions, green chillies and ginger garlic paste. Mix it well.

  6. On medium flame stir fry until it turns golden brown in color. Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder and salt.

  7. When the tomatoes melt nicely add the chicken pieces with garam masala or allspice powder. Fry for 2 to 3 minutes. Stir it nicely so the spices get nice coat of it.

  8. Add the water depending on the desired consistency required. Shift everything to a pressure cooker. Cover and cook for 3 to 4 whistle. Wait until whistle open itself.

  9. If you want to cook the dish in a pan cover and cook on low flame for next 20 to 25 minutes or it comes to your desired consistency of gravy.

  10. In a small bowl heat 1 tablespoon of clarified butter. When it is hot add the green chillies, grated ginger and coriander leaves. Fry it for 1 to 2 minutes then shift it instantly to the pan.
