Ingredients

For marinade

  • 2 lbs or 500 gram of chicken
  • 1/3 cup of thick yoghurt
  • 1 tablespoon of ginger garlic paste
  • 1 teaspoon of ground cumin
  • 1 teaspoon of Kashmiri red chilli or paprika powder
  • Salt to taste

For sauce

  • 1 + 1 tablespoon of clarified butter
  • 1 medium-sized onion chopped
  • 1 teaspoon of minced ginger
  • 1 teaspoon of minced garlic
  • 2 teaspoon of Kashmiri red chilli or paprika powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of black pepper
  • 1/2 tablespoon of coriander powder
  • 1 teaspoon of garam masala or allspice powder
  • Puree of 5 peeled and chopped tomatoes
  • 1/3 cup of thick yoghurt
  • 1/2 teaspoon of black pepper
  • 2 tablespoon of chopped coriander leaves
  • Salt to taste

Instructions

  1. Preparing marinade

    Take a bowl and add ginger garlic paste, ground cumin, Kashmiri red chilli or paprika powder, yoghurt and salt. Combine them well to make a fine paste. Use the paste to coat the chicken pieces evenly from all sides. Cover and set it aside to marinate for next 45 minutes or overnight in a fridge.

    (Take out the marinated chicken with marinade 30 minutes prior to cook.)

  2. Heat a tablespoon of clarified butter in a medium-sized pan and add marinated chicken pieces and fry them in batches until the chicken turns golden brown in color from all sides. Keep transferring the chicken pieces to towel paper or kitchen towel to absorb the unnecessary oil.

  3. Heat a tablespoon of clarified butter in the same pan and on medium flame fry the onions until it turns golden brown or translucent. Stir occasionally.

  4. When the raw smell goes out from the pan add the tomato puree and cook it on medium flame for next 7 to 8 minutes. Stir occasionally.

  5. Add the coriander powder, Kashmir red chili or paprika powder, turmeric powder, black pepper powder and salt. Stir fry the spices for next 2 to 3 minutes.

  6. Instantly add the fried chicken pieces with yogurt and turn the flame to very low. Stir continuously and cook until it starts to boil and yogurt mixes nicely with the sauce.

  7. Add the garam masala powder or allspice power to the pan. Cover the lid and simmer it for next 10 to 12 minutes or chicken cooked properly.

  8. Turn off the flame once the chicken cooked properly and garnish the chicken curry with chopped coriander leaves. Mix everything well.

    Serve it hot with your favorite bread and rice.
