  • 1 whole chicken diced into right serving pieces well skinned and trimmed of all fat
  • 1/2 cup plain yogurt
  • 2 tbsp fresh lemon juice
  • 2 tbsp garlic paste
  • 2 tbsp ginger paste
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1/2 tbsp pepper powder
  • 8 pieces cardamom
  • 8 pieces cloves
  • 2 tbsp salt or to taste
  • Clarified butter/Vegetable oil for brushing
  • Fresh cilantro sprigs for garnish
  • Slices of cucumber, onion, tomato, and lemon for garnish


  1. Clean chicken properly and cut slashes in the flesh to marinade. Take a vessel and mix yogurt, lemon juice, garlic paste, ginger paste, ground coriander, pepper powder, cardamom, cloves and salt.

  2. Stir the mixture well and then pour the mixture over chicken and rub it into the flesh so that all the chicken pieces are well marinated. Cover and refrigerate the chicken for 6-8 hours and remove it at least 60 minutes before cooking.

  3. Get the tandoor prepared for roasting or it can be grilled depending on what way you wish to cook it. Once the tandoor or grill is ready to remove the chicken from marinade and press the excess marinade and brush the chicken with oil or clarified butter. Place the marinated chicken in the tandoor using the tandoor stick and cover the tandoor.

  4. Keep turning the tandoor stick 3-4 times to ensure that the chicken is well cooked and when the juices run clear when a piece is pierced with a knife it is ready to serve.

  5. Serve the tandoori chicken pieces with onion, cucumber tomato, and lemon with your choice of bread or steamed basmati rice.
