Ingredients

  • 1/2 lbs or 250 grams of fresh strawberries sliced
  • 1/2 cup of sugar or jaggery
  • 1 tablespoon fresh lemon juice

Instructions

Preparing the jam

  1. Take a plate and shift it to a freezer and let it sit until we need it. We will need this later in the course to find out the consistency of our jam.

Making strawberry jam

  1. Take a pan and add all the strawberries along with jaggery and lemon juice. Take the pan on flame and keep it on medium flame. Give it a good mix as it progresses to heat.

  2. You will see the jaggery start melting in the pan and as heat continues strawberries start to release the juice. Right now, turn the flame to very low. Mix everything nicely and let it simmer for few minutes. Stir occasionally.

  3. Very soon the formed foam will come on the top. Take a spatula and discard it from the pan. No foam should remain in the pan.

  4. Again, simmer it for next 20 minutes while stirring in between. The 20 minutes time is more than perfect to have a thick consistency. It will start leaving from sides this the only way to ensure it is done now and you can check the consistency as well.

  5. Bring the chilled plate from freezer and drop a little of jam onto chilled plate. If it doesn’t look watery or not floating on the plate then it is all done now. This step is very necessary to check how good your jam is made.

  6. Turn off the flame and let the jam comes to normal room temperature. Now, shift it to a clean jar. Store and use it and every time close it tightly.

You can replace the jaggery with the white sugar. You can also adjust the amount of sugar or jaggery as per your taste.
