Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Servings 4 People

  • 500 gram or 1 lb chicken breasts
  • 2 medium sized onions chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1/2 bowl thick yoghurt
  • 2 green chillies slit
  • 3 medium sized tomatoes chopped
  • 1 inch cinnamon piece
  • 10 pieces of black pepper
  • 8 pieces of cloves
  • 3 bay leaves
  • 1 tbsp Kashmiri red chilli powder or paprika powder
  • 4 pieces of green cardamom
  • 1/2 tbsp turmeric powder
  • 1/2 tbsp garam masala powder or all spice powder
  • 1 1/2 tbsp coriander powder
  • 3 tbsp of butter
  • 1 tbsp of fresh lemon juice
  • 3 tbsp finely chopped coriander leaves
  • Salt to taste
  • Water as required

  1. Wash the chicken breasts pieces in running water. Now wash it using a kitchen towel until it becomes dry. Shift chicken to a big dry bowl and rub 1/2 tablespoon of ginger paste and 1/2 tablespoon of garlic paste evenly on chicken breasts pieces.
  2. Add 1/2 tablespoon of Kashmiri red chilli powder/paprika powder, turmeric powder, lemon juice and mix it well. Now let it marinate for at least 45 minutes on normal temperature and for best result marinate it for overnight in fridge.

  3. Next day after marination, discard marinated chicken 30 minutes earlier before you are going to cook. Take a pan and heat 1 tablespoon of butter on medium flame and wait until butter melts completely. Now, in batches add few chicken pieces and fry it until it turns light golden in color from all sides. Do the same and fry all chicken breasts pieces.

  4. Using a blender add cloves, green cardamom, cinnamon, bay leaves, green chilli, black pepper and a little water. Blend it to make a fine and smooth paste. Cover and set it aside in a bowl. Using the same blender add tomatoes to make a smooth paste and shift it a separate bowl and set it aside.

  5. Use a large pan and heat 1 tablespoon of butter. Add chopped onions and on medium flame fry it until it turns golden brown in color or gets translucent. Now add half tablespoon of ginger paste and half tablespoon of garlic paste. Stir fry continuously for next 30 seconds until the raw smell goes out. Instantly, add the yoghurt and turn the flame to low. On low flame yoghurt will not get burn but will add flavor to the sauce.

  6. Now, add 1/2 tablespoon of Kashmiri red chilli powder/Paprika powder and 1 tablespoon of coriander powder. Stir fry for 4 to 5 minutes or until oil starts separating from sides. Now, add the chopped tomatoes and cook it for next 7 to 8 minutes on medium flame. Stir occasionally. Once tomatoes get soft oil again start separating from sides. Turn off the flame and wait until it comes to normal temperature. In a blender make a fine paste of the mixture.

(You can use this paste for next 7 days for any curry recipe you want to cook. The paste will increase the flavor and it will be much of taste as today!)

  7. Using the same large pan add the paste with reserved spices paste. Add water and mix it well. (Depending on your desired consistency of gravy). Now, add the fried chicken pieces into the mixture. Cover and simmer it for 15 minutes. Open the lid and add garam masala powder/allspice powder and mix it gently for a while now again cover and cook for another 5 minutes. Chicken has been cooked by now. Garnish it with fresh chopped coriander leaves and serve it hot with your favorite bread or rice.

Recipe Notes

If you are going to marinate the chicken overnight then don't add the yoghurt while cooking instead add the yoghurt while marinating by coating evenly on chicken breasts pieces. The yoghurt will add wonderful flavor in chicken pieces.

After making the fine paste at step-6, you can store the paste in the fridge and use it until next 7 days. Don't get worry the paste will be much flavoured as the day progresses.
