Ingredients

Marinade ingredients

  • 1 red onion sliced
  • 1 1/2 teaspoon of ground nutmeg
  • 1 tablespoon of lemon juice
  • 1 cup of extra virgin olive oil
  • 1 cup of red wine

Ingredients for kabobs

  • 3 lbs or 11/2 kilogram of beef cut into 11/2 cubes
  • 3 teaspoon of garlic powder
  • 2 teaspoon of ground green cardamom
  • 2 green bell peppers
  • 2 red bell peppers
  • 1 large red onion cubed
  • Kosher salt
  • Black pepper
  • 1 1/2 teaspoon of ground nutmeg
  • 1 teaspoon of allspice powder
  • 1 teaspoon of paprika

Instructions

  1. If using wooden skewers take 10 skewers and soak them in water 30 minutes prior to cook so it will help cooking process easy.
  2. Take a small mixing bowl and add all the spices. Mix them together. On beef cubes rub the spices mixture evenly on all sides so it gets well seasoned.

  3. To prepare the marinade take a deep dish and add the olive oil, red onions, lemon juice and red wine. Add the beef cubes into this marinade and using your hands mix them gently with the marinade. Cover and shift this to a refrigerator to marinate for 4 hours or overnight.

  4. On the next day or after 4 hours take the deep dish out from the refrigerator 1 hour prior to cook.

  5. Use a gas grill and grease some oil and heat it on very high flame for 10 minutes. Don't discard the remaining marinade.

  6. Dealing one skewer at a time thread each skewer with the beef cubes, red onion, green and red pepper.

  7. Season it with the ground black pepper then shift the skewers on the grill to make shish kabobs. While grilling the kabob cook it for 8 minutes to 10 minutes and flip midway through. During the cooking process brush with some the reserved marinade for a couple of times.

  8. Discard the skewers right away from the flame and transfer it to a serving platter. Garnish the kabobs with cilantro leaves then serve it hot.
