Ingredients

  • 2 1/4 lbs or 500 gram of chicken
  • Juice of 1 orange
  • Juice of 1 lemon
  • 4 cloves of garlic
  • 1/4 cup of extra virgin olive oil
  • 1 teaspoon of red pepper flakes
  • 1/4 teaspoon of black pepper
  • 2 teaspoons of sweet paprika
  • 1 teaspoon of dried oregano
  • Kosher salt
  • Fresh parsley chopped to garnish

Instructions

  1. Preheat your oven to 200 degrees Celsius and 390 degrees F.

  2. Take a small bowl and add black pepper, sweet paprika, oregano, chili flakes, and lemon zest. Mix everything on low until it combines well.

  3. Take a blender and add the garlic with orange juice, lemon juice, and olive oil. Blend it gently to form a nice paste. Shift this to a bowl and set it aside.

  4. Take a ziplock bag and add the prepared blended paste of juices and spices. Add the chicken pieces as well and toss everything so it combines nicely.

  5. Shift the marinade into a refrigerator for marinating for one hour and for better result marinate it for overnight.

    (If marinating overnight take the marinade out of the refrigerator 30 minutes prior to cooking so the chicken comes to normal temperature. It is very necessary to cook this way so the chicken , cooked.)

  6. Now take the chicken and marinade out of the ziplock bag and transfer this on a baking dish. Sprinkle kosher salt evenly on chicken and cook it for 45 minutes.

  7. Our peri peri chicken is ready to serve now. Transfer it to a serving plate and garnish it using fresh chopped parsley.
