Ingredients for making chicken
- 4 lbs or 1 3/4 kilogram of chicken
- Kosher salt
- 1/2 cup of green onions chopped
- 2 tablespoons of vegetable oil
- 2 inch of peeled and grated ginger
- For making rice
- 4 cloves of minced garlic
- 2 cups of rice
- 2 cups of chicken broth
For making chilli sauce
- 1 tablespoon of lemon juice
- 1 tablespoon of sugar
- 4 tablespoons of sriracha chilli sauce
- 4 cloves of garlic
- 1 inch peeled and grated ginger
- 2 tablespoons of chicken broth
- 1 sprig of cilantro leaves chopped
- 1 cup of bite-sized chopped cucumber
- Handful of scallions
For making ginger-garlic sauce
- 4 tablespoons of vegetable oil
- 2 tablespoons of peeled and grated ginger
- Kosher salt
- 1 teaspoon of white vinegar
For making the chicken
Using a small handful of kosher salt rub onto the chicken pieces from all sides evenly then use chopped green onions and ginger and smear them onto chicken pieces from all sides. You can pierce the ginger on the chicken.
Take a large stockpot and add the chicken and fill it with water until it reaches 1-inch of height. On high heat wait until the water comes to boil then turn the flame to low. Simmer and cook for next 30 minutes.
(To check the doneness pierce a fork in a chicken piece if it is soft and tender and goes in and comes out smoothly means it is done now if using less chicken then cook for only 25 minutes.)
After 30 minutes take the stockpot off the flame and uncover the lid.
Use a medium-sized vessel and add plenty of ice cubes or very cold water and add the chicken pieces to cool them down quickly. This process is necessary to have tender and soft chicken pieces.
Use a kitchen towel to pat dry the chicken pieces and rub the sesame oil on chicken pieces and transfer the chicken into a bowl. This way chicken will not become dry.
For making the rice
Take a large bowl and add rice. Use your hands to rinse and clean the rice 2 times then soak the rice in the same bowl for 20 minutes by adding plenty of water.
Heat 2 tablespoons of vegetable oil in a pot on medium flame. Add the ginger and garlic and fry them stirring continuously for 20 seconds or until raw smell goes out.
Add the rice and mix everything well. Add the chicken broth and salt and wait until it comes to boil. Once the water comes to boil turn the flame to low and simmer it for 15 minutes after covering the lid.
Take the pot off the flame and let it sit for the next 10 minutes.
Making chilli sauce
Take a blender and add 1 tablespoon of lemon juice, 1 tablespoon of sugar, 4 tablespoons of sriracha chili sauce, cloves of garlic, 1 inch peeled and grated ginger, and 2 tablespoons of chicken broth. Blend it until it does not come to a smooth and a bright red texture. Transfer this to a bowl.
Making ginger garlic sauce
Take a small saucepan and heat vegetable oil on high flame. Once you can see the smoke from the saucepan, take it off the flame. Add the garlic and ginger and stir-fry for 15-20 seconds then immediately add the vinegar and salt. Mix everything well then shift this to a small bowl. Set it aside.
Use 6-7 cups of chicken broth to serve as a soup. Add the soup, rice, chili sauce, ginger garlic sauce, and sliced cucumber on the serving table. Make sure to garnish it using cilantro leaves and scallions.
