Have you never had a chance to eat or learn how to make Eton mess dish, which is an outstanding tremendous English dessert? It made in a very simple way and what makes it so sweet are the meringues, strawberries with the whipped cream. Yeah, that’s all!!

To make Meringues

  • 2 pinch of tartar cream
  • 100 gram or 3 oz of caster sugar
  • 1/2 tsp of vanilla extract
  • 2 egg whites

Adding strawberries

  • 1 lb of strawberries
  • 2 tablespoons of lemon juice
  • 2 tbsp of granulated sugar

To make whipping cream

  • 2 cups of chilled heavy cream
  • 1 tsp of vanilla extract
  • 2 tbsp of granulated sugar


To make Meringues

  1. Preheat your oven to 75 degrees. Use a parchment paper and line a baking sheet and set it aside.

  2. Use a mixing bowl and add egg whites and tartar cream. Whisk them firmly until the mixture turns foamy and smooth. Add the sugar and keep whisking gradually so it combines well and finally mix the vanilla extract and mix it until everything mixes well.

  3. Shift the meringues on the baking sheet and bake it for the next 2 hours or until it is well cooked and can easily be peeled off from the paper. Take the meringues out from the oven and set it aside until it cools down properly.

For making strawberries

  1. Take a bowl and add sugar, strawberries and lemon juice and combine them well. Set it aside for the next 30 minutes on normal temperature then take half of the strawberries and using food processor make a fine paste of it. Set it aside.

  2. Take a blender and add sugar and heavy cream. Beat it to make a stiff peaks form then whip after adding the vanilla. Let everything combines well.

Assembling the dish

  1. Fold the meringues after crumbling with the whipped cream. (Reserved a little to decorate)

  2. Use decorative glasses to layer the Eton mess. First off, take a few spoons of strawberries paste layer it followed by the creamy paste. Repeat it until everything finishes well.

  3. Finally, put the sliced strawberries along with the mint and a few meringues that we have stored for decorating.

Recipe Notes

The complete total time for preparation consumes around 30 minutes. If you already have done with the meringues or using store bought meringues then it cuts the preparation time but I prefer to make it on my own.

If you have prepared meringues ahead of time then you should store it in an airtight container so it works like charm for a week or two. Don’t store into a refrigerator.

For me, while making this how to make Eton mess dish I prefer to take care of meringues because sometimes when I’m in a hurry either I made it prior to cooking on the other day or go out to buy it from a supermarket.

I like to have fresh strawberries because it adds tremendous taste and adding the cheese in the layer process makes it a perfect texture than normally it does.

At the end, I prefer to decorate it with the a little reserved meringue at the top followed by the cheese. You’re independent enough to choose your favorite cheese and there is no restriction with the decoration, either.
