Ingredients

  • 1 pound ground elk/beef
  • 1 onion finely chopped
  • 3 tbsp butter
  • 5 carrots peeled and sliced
  • 8 red potatoes unpeeled and diced (small)
  • 5 celery stalks chopped
  • 1 tbsp chopped oregano
  • 1 tbsp chopped sage
  • 3 chopped parsnips
  • 2 tbsp Worcestershire sauce
  • 4 cloves of garlic chopped and minced
  • 1 tbsp paprika powder
  • 2 tbsp balsamic vinegar
  • 2 tbsp flour (gluten free or all purpose)
  • Sea salt to taste
  • Black pepper to taste
  • Parsley to garnish
  • White cheddar cheese to garnish

Instructions

  1. In a large stock pot add 1 tablespoon of butter and heat it on medium flame. Add the ground elk/beef and fry for 3-4 minutes or until they change the color to golden brown from all sides. Sift it to the 6 quart crock pot.

  2. In same stock pot and heat the remaining butter on medium flame. Add the carrots, onions, celery and parsnips. Mix it well.

  3. Cook it for next 8-10 minutes or until the onions turns golden in color or becomes translucent.

  4. Add the garlic cloves, paprika powder, oregano and the sage. Mix it well. Stir and cook for 2-3 minutes.

  5. Add the gluten free or all purpose flour. Stir the mixture until the flour nicely combines with the other ingredients. Sift the mixture to a 6 quart crock pot onto ground elk/beef.

  6. In same stock pot add the balsamic vinegar, Worcestershire sauce, potatoes and beef stock. Stir and combine everything gently. Stir and cook for 2-3 minutes. Transfer the gravy to the crock pot over ground elk/beef.

  7. Cook it on low for 8 hours. If you are in hurry then cook for 4 hours on high heat.

    Garnish it with white cheddar cheese and fresh chopped parsley.

Recipe Notes

Adding a little flour to the gravy make the gravy thick in consistency but you are free to chose your desired gravy.

When you are frying the ground elk/beef and then after the veggie stock don’t wash stock pot but let it add the flavor to the fried ingredients.

When you are preparing the sauce make sure there are no brown bits remained in the stock pot. Instead wash the stock pot or remove the brown bits from it.

If you have a local butcher that can supply you all types of meat then this is really a wonderful dish for you. If you can get the ground elk or even with ground beef, then this recipe, especially in winter, can do a real magic because in winter you can have red carrots.

The best part of red carrots is that they are sweet in taste and along with sweet potatoes the entire recipe gives an awesome taste.
