  • 1/3 cup + 2 tbsp of all purpose flour
  • 4 lb beef chuck roast
  • 3 cups of beef broth
  • 2 1/2 tsp of kosher salt
  • 1 1/2 tsp of Ground pepper
  • 4 carrots sliced into 2 inches long pieces
  • 3 1/2 tbsp of virgin olive oil
  • 3 stalks of celery cut into 2 inches pieces
  • 1 onion finely sliced
  • 3 cloves of garlic crushed
  • 3 tbsp of tomato puree
  • 1 cup of red wine of your choice
  • 2 bay leaves
  • 2 sprigs of thyme
  • 1/2 tsp allspice powder
  • Parsley leaves


  1. Sprinkle the freshly grounded black pepper and kosher salt all over the roast. Now use all purpose flour to coat onto the roast gently.

  2. Take a non stick skillet and heat 2 tablespoon of oil on medium-high flame. Add the roast into skillet and cook it for 8-10 minutes until it turns golden brown in color from all sides of the roast.

  3. Shift the roast to slow cooker of 6-quarter. Also add onions, celery, garlic and carrots.

  4. On medium-high flame, add the remaining oil to the skillet. Add the tomato puree and cook until the oil separates from the sides and tomato becomes soft and tender.

  5. Take a bowl and add flour and red wine to it. Whisk it until it becomes a thick mix. No need to worry if there are a few lumps remains.

  6. Add the bay leaves, thyme, beef broth, salt, a little of pepper and allspice. Bring it to a simmer while whisking until the gravy turns thick and smooth.

  7. Transfer the gravy into the slow cooker. Cover and cook it on low for next 8 hours.

  8. Remove the roast and let it sit for a few minutes. Strain the vegetables and discard the thyme and set the gravy aside. Add the parsley and toss the vegetables and sprinkle with black pepper and kosher salt.

  9. Serve the vegetables and meat on platter. Use some of gravy to moist the vegetables and meat and keep aside the remaining gravy.

Chances are you are going to have much more gravy that you may not like. If that is the case you can thicken the gravy by adding cornstarch and plain flour into the gravy and give it a good mix. Add a little water and simmer and stir until it thickens.

After you finish because of condensation the juice may water down. To avoid this situation you need to shift the juices into saucepan and let the juices to a boil for about 10 minutes closely or the flavor or concentrated by producing thick juice.
