Ingredients

  • 1 tsp of extra virgin oil
  • 2 OZ unsalted butter
  • 2 1/2 OZ flour
  • 1 Cloves of garlic well minced
  • 1 diced carrot
  • 1/2 onion finely chopped
  • 1/2 red capsicum finely chopped
  • 1 Stick of celery finely diced
  • 2 Cups of chicken broth or chicken stock (low sodium)
  • 3 Cups of milk
  • 1/4 garlic powder
  • 1/4 onion powder
  • 1/4 pepper powder
  • 1/2 of dried thyme
  • 1 Cup of shredded or diced chicken
  • 3/4 Cup of peas
  • 2 cubes sized cut bread
  • Olive oil spray
  • Salt to taste

Instructions

  1. On medium high flame take the pot and heat oil. Add the onions and garlic and let it cook for 2 minutes, so it gets half golden in color.

  2. Now, add celery, capsicum and carrot into the pot. Mix and cook for another 1 minute.

  3. Drop the butter and melt into the mixture. Add flour and stir and cook continuously for a minute.

  4. Add chicken broth or chicken stock and mix it well so it incorporates. Add milk and wait until it mix nicely then add spices, peas, chicken and salt.

  5. Simmer it and stir occasionally so it doesn’t get sticky in the pot. As it progresses, it will start thickening within 5 minutes.

  6. If it becomes as thicken as you want adjust black pepper and salt. Transfer it to serving soup bowl and garnish it with croutons and thyme.

  7. Sprinkle the salt and spray croutons with oil and bake for at least 5 minutes or until it turns golden brown in color.
