- 2 lbs boneless chicken pieces
- 2 oz or 60 ml yoghurt
- 1/2 tbsp minced garlic
- 1/2 tbsp minced ginger
- 1 tsp paprika powder or Kashmiri red chilli powder
- 1 tsp cumin powder
- Salt to taste
For making tikka masala gravy
- 1+1 tbsp unsalted butter
- 1 onion finely chopped
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 tsp paprika powder or Kashmiri red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp black pepper powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder or allspice powder
- 5 tomatoes puree
- 2 oz or 60 ml yoghurt
- 1/2 tsp cayenne pepper
- Coriander or cilantro leaves to garnish
- Salt to taste
Cut the chicken pieces in your desired shape and size. Wash chicken pieces in running water for 2 to 3 times and wash and dry them using kitchen towel.
Use a deep bowl and add the chicken pieces followed by yoghurt, garlic, ginger, cumin, paprika powder and salt. Gently mix them for 2 minutes so the spices evenly coat the chicken pieces.
Cover the bowl and set it aside to marinate for at least 30 minutes. For a better result marinate the chicken pieces overnight.
Making tikka masala gravy
On medium high flame heat 1 tablespoon of unsalted butter in a skillet. Add the chicken pieces into skillet. Stir and fry the chicken for 6-7 minutes or until it changes the color to turn brown from all sides.
Use same skillet and add remaining 1 tablespoon of unsalted butter. Heat it of medium-high flame and add the finely chopped onions. Sauté the onion for 5 minutes so it gets translucent or turn light golden brown in color.
Now, add the minced ginger and minced garlic. Stir and cook for 30 seconds or until the raw smells goes out.
Pour the tomato puree into the mixture and cook it for next 7-8 minutes until the tomatoes turn soft and tender.
Mix the coriander powder, garam masala powder, paprika powder, turmeric powder, cayenne, black pepper and salt. Cook for 2-3 minutes so the spices cook well. Stir occasionally.
Add the chicken pieces and yoghurt and turn the flame to low so yoghurt doesn’t get burn but add the flavor to the mixture. Cover and Simmer for next 10 minutes. Stir occasionally.
Now, turn off the flame and shift the chicken tikka masala to serving bowl. Garnish it with coriander leaves or cilantro leaves. Serve it hot with basmati rice or bread of your choice.
Use of clarified butter instead of unsalted butter can increase the taste and aroma of this recipe. You can add red chilli powder to make this dish spicy.
