- 1 1/2 tsp Of Coriander Powder
- 1 tsp Of Turmeric powder
- 1 1/4 tsp Of Cumin powder
- 1 tsp Of Chilli powder
- 1 tsp Of Paprika powder
- 3 tsp Of Curry Powder Indian
- Salt to taste
- Sugar to taste
- 1.5 lb or 600 gram Chicken thighs or chicken breasts
- 1 Small onion very finely chopped or grated
Making Satay Sauce
- 2 tbsp Mustard oil or olive oil preferably mustard
- 3 Red chilies available to you
- 1 Small onion well diced
- 4 Cloves Of minced garlic
- 1 Cup Of chicken stock
- 3/4 Cup Of roasted peanuts
- 2 tsp Of Kecap Manis
- 1 tsp Of dark soy sauce
- 1 Of coconut milk (buy a can of 400 gram)
- 2 tbsp Peanut butter
- 1 Lemongrass only white part
- Lime juice to taste
- Water as required
- Parsley/Coriander leaves
- Chopped peanuts
Take a bowl and mix all the Satay seasoning ingredients together so it mixes well.
Take another deep bowl and add chicken into it. Now add 3 tablespoon of satay seasoning and coat it on the chicken pieces. Once you are done set it aside for marination. Marinate it for at least 30 minutes preferably overnight marination for best result.
Take a skillet and add 1 tablespoon of oil and heat it on high flame. Add chicken pieces into it and fry and toss from all the sides until it turns light golden in color. For a better result do this process on very low flame. Now, shift the fried chicken to a bowl.
Use the same skillet and heat 1 tablespoon of oil on medium flame. Add onion, chilli and garlic cloves and fry it for 2-3 minutes until the onions become translucent or golden in color.
Now, add the remaining satay seasoning into the skillet and mix it with fried onions. On low flame cook the mixture for 1-2 minutes so the seasoning cooked well.
Add chicken broth and half of peanuts together and shift it to a blender and make a very fine puree or smooth paste. Now, add this to skillet.
Add remaining half of peanuts, kecap manis, dark soy sauce, peanut butter and coconut oil. Mix it well and add water as you desired. Stir and combine the mixture.
Add lemongrass and chicken to the sauce. After a good mix, simmer it for next 15 minutes to 20 minutes on low flame. Stir it in between and check for the thickness.
Transfer it to serving bowl and add the lime juice and garnish with peanuts and parsley/coriander leaves. Serve it hot with rice.
This recipe desperately seeks ground red chilli of type you have available. Mind you, American red chilli is not a pure type of ground red chilli. Instead of that, use cayenne pepper.
