Ingredients

  • 4 Cups Of cut-up boiled chicken
  • 1 Stalk Celery pieced into 1/4-inch dice
  • 4 numbers Of of scallions finely sliced
  • 1 1/2 teaspoon Finely chopped fresh tarragon or fresh dill
  • 3 teaspoon Finely chopped parsley
  • 1 Cup Of homemade mayonnaise
  • 2 teaspoons Of freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoon Kosher salt
  • Pinch Of Black pepper Freshly ground
  • 10 Sprigs Parsley
  • 2 Sprigs Fresh thyme
  • 1 Piece Halved small onion
  • 1 Piece Carrot
  • 1 Stalk Celery
  • 3 Pounds Of Chicken breasts halves (all bones and fat took away)
  • 6 Cups Of Chicken broth homemade variety or low-sodium canned variety

Instructions

  1. Take a mixing bowl and toss chicken, celery, scallions and herbs together. Set them aside for preparing chicken salad recipe.

  2. Take a small bowl and now whisk collectively mayonnaise, mustard, lemon juice: add salt and pepper to taste.
