To make the sauce

  • 3/4 cup or 1 medium size grated onion
  • 4 tbsp olive oil
  • 2 cloves of garlic peeled and minced
  • 28 oz 3 cups or 1 can crushed tomatoes
  • 1/2 tsp sugar
  • 1/2 tsp red pepper flakes
  • 1 tsp dried oregano

To make the chicken

  • 1 cup of breadcrumbs
  • 1.5 lbs or 4 cutlets chicken breasts
  • 4 tbsp olive oil
  • 1 cup of grated parmesan cheese
  • 2 eggs white
  • 8 oz mozzarella cheese
  • 2 tbsp sliced basil leaves
  • Salt to taste


Making the sauce

  1. Take a saucepan and heat olive oil on medium flame. Add the onion and sauté it until it becomes soft or gets translucent.

  2. Add the garlic into the saucepan and stir and cook for 30 seconds or until the raw smell goes out.

  3. Now in the saucepan add the tomatoes, sugar, oregano and red pepper flakes. Mix everything nicely. Reduce the heat to low and simmer everything for about 10 minutes. Simmer it uncovered while you do the next part to prepare the chicken.

Making the chicken

  1. Preheat the oven t 400 degree F.

  2. Use a wrapping paper or wax paper and one by one place the chicken onto it. Take a hammer or a heavy bottle of wine to roll onto the chicken pieces one by one to make them thickness of 1/2 to 1/4 inches.

  3. Sprinkle some salt evenly on each of chicken cutlets.

  4. Take a shallow bowl and add the half of parmesan cheese, breadcrumbs and salt. Reserve the rest of parmesan cheese for further use. Mix everything gently until they mix well.

  5. In another bowl break and add the eggs to the bowl. Whisk them for a while until it becomes a soft and smooth paste.

  6. Use a large pan and add 4 tablespoon of olive oil on medium high flame. Once the oil spreading the smoke or it is completely well heated, add one breadcrumb. Flip them and make them brown from all sides but not let them burn.

  7. One by one use the each cutlets to dip into the egg paste and then with breadcrumbs.

  8. Now on medium flame fry the chicken cutlets from each side until they turn golden brown in color. Make sure they won't get burn. Do the same for the rest of cutlets.

  9. Use a baking dish and spread much tomatoes sauce so it coats the bottom of the pan. Use the browned cutlets to make bottom layer in the baking dish.

  10. Use a spoon and spread it over each cutlet. Add the basil leaves above them evenly.

  11. Now use the mozzarella cheese to spread above the basil leaves. Now, finally spread the reserved parmesan cheese on top.

  12. Shift the baking dish to the oven and bake it at 400 degrees F or the mozzarella comes to brown in color.

    Transfer it to the serving bowl and serve it with pasta and sauce. You can also serve it in a large bread roll.

Recipe Notes

Instead of using only olive oil to cook this recipe I prefer to mix half and equal size of olive oil and avocado oil because the mixture of these two oils tolerates the high temperature better to produce a great taste.

You can use good quality tomato sauce can for a nice taste. You can also alter the basil with Italian herbs or with pesto.

Also mozzarella tastes nice when they are cut into cubes instead of shredding and use in this dish.
