Ingredients

  • 1 lb or 500 gram of chicken breasts
  • A pinch of black pepper
  • 1 pinch of salt
  • 1 medium-sized onion cubed
  • 4 cloves of minced garlic
  • 2 tbsp of olive oil or sunflower oil
  • 1/2 cup of wine of your choice
  • 250 gram or 8 oz of mushrooms
  • 2 cups of chicken stock
  • 250 gram or 8 oz of dry pasta
  • 1 and 1/2 cups of parmesan cheese grated
  • 1 and 1/2 cups of heavy cream
  • Handful fresh chopped parsley

Instructions

  1. Wash the boneless chicken pieces into running water to get away from bad elements. Now dry wash it using a towel and season the boneless chicken pieces using salt and black pepper.
  2. Take a pot and heat 1 tablespoon of oil over medium heat. Take half boneless chicken and add to the pot and fry it from both the sides until the chicken pieces turn golden brown in color from both the sides. Do the same for rest of the boneless chicken pieces. Set it aside.

  3. Add 1 tablespoon of olive oil to the pot and heat it until it comes to good heat. Add the cubes onions to the pot and stir fry until the onions get translucent or golden brown in color. Add the garlic and sauté for 20 seconds until it leaves the raw smell.

  4. Now add your favorite wine and mix everything well and cook until the gravy reduces to half of quantity. Now, add mushrooms and stir cook for 1-2 minutes on medium high flame.

  5. Mushrooms will look shrinking and cooked nicely. Add the dry pasta, chicken broth and cream with a pinch of black pepper and kosher salt. Wait until it comes to boil then simmer and cook for at least 12 to 15 minutes. Stir occasionally.

  6. Add the parmesan cheese to the mixture and take the pot away from the heat. Now, add and stir mix the cream little by little until the sauce becomes nice and thick. Check for seasoning and adjust it.

Recipe Notes

Although you can choose your favorite wine but it will be great if you use dry white wine that can be anything like Sav Blanc, Pinot Grigio, etc,

If the cook time becomes higher then the consistency of gravy may gets very thick. To avoid such situation you can add chicken broth as per your demand of gravy and cook for a little.

You can use stored parmesan cheese but it can add more taste if it is fresher.
