Ingredients

For the beef

  • 2 lbs of beef chuck or beef stew meet trimmed into your desired size
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/3 cup of gluten free flour
  • Sea salt to taste
  • 2 tbsp olive oil

For making stew

  • 1 onion diced
  • 4 cloves of garlic chopped and minced
  • 6 tbsp tomato paste
  • 4 cups of beef broth
  • 2 tbsp balsamic vinegar
  • 3 medium sized potatoes chopped into 1" chunks
  • 1 large sweet potato peeled and chopped
  • 3 large carrots peeled and sliced
  • 2 tbsp Italian seasoning
  • 2 tbsp Worcestershire sauce
  • 1 stalk of celery
  • 2 bay leaves
  • 2 tbsp parsley to garnish
  • Salt to taste
  • Black pepper to taste
  • 3 tbsp cold water

Instructions

  1. Use a zip lock plastic bag and add beef stew, Italian seasoning, salt, black pepper, gluten free flour and onion powder. Shake it nicely so the beef gets a nice coat of all the ingredients. You can use a bowl as well to mix them using your finger or a wooden stick.

  2. Use a skillet and heat olive oil on medium flame. Add the beef stew and fry it from all sides. Fry it until it turns golden brown in color from all sides. Sift the beef stew to the slow cooker.

  3. Use the same skillet and add the onion and garlic. Fry them in the remaining olive oil for 2-3 minutes until the onion get translucent.

  4. Add the tomato paste along with balsamic vinegar to the skillet and fry them with the onions for 2 minutes or until the tomatoes turns tender. You can use red wine instead of balsamic vinegar in this step. Sift it on the top of the beef stew in slow cooker.

  5. In the same skillet add the potatoes, Worcestershire sauce, bay leaves, beef broth, Italian seasoning, carrots and celery. Stir and cook to combine for 2-3 minutes.

  6. Add the water for your desired gravy. Sift it to slow cooker on top of beef stew.

  7. Cook on low flame for 6 hours. If you are in hurry cook on high flame for 3 hours. Time may vary depending on how the slow cooker runs. You can stir about half way through.

  8. Check for the seasoning. Garnish with the chopped parsley and serve it hot.


Recipe Notes

Browning the beef increases the flavor of the stew and the leftover tastes amazingly more delicious on the other day. This dish tastes far better on the next day.

If you want to save your time use a pound bag of frozen store bought mix veggies instead of preparing them at home. Also, don't thaw the veggies stirring them is everything it needs in the dish.

For a thick stew:

You need to make a slurry in order to cook thick stew. You need to add 2 tablespoons of flour with 3 tablespoons of water in a bowl and whisk them gently until it turns a fine paste.
