Apple pie recipe is king of all pie and all American favorite dessert and we are going to see how to make apple pie from scratch. Apple pie recipe is not just to taste everyone on Thanksgiving Day but it is daily miracle that is cooked and served to the most of Americans houses.
For making crust
- 2 1/2 cup of all purpose flour
- 1/3 cup of veggie shortening
- 1/2 cup of unsalted butter
- 8 tablespoon of chilled water
- Kosher salt
For making filling
- 2 tablespoons of all purpose flour
- 2 tablespoons of cornstarch
- 8 cups of peeled and sliced apples
- 3/4 cup of sugar
- 2 tablespoons of fresh lemon juice
- 1 teaspoon cinnamon
- 1/4 cup of boiled cider
- 1/4 teaspoon of kosher salt
- 1/4 teaspoon of nutmeg
- 3/4 tablespoon of vanilla extract
- 2 tablespoons of butter sliced
Making the crust
Take a medium-sized bowl and add all purpose flour and kosher salt. Mix it nicely then add vegetables shortening and whisk it until the mixture comes to crumble.
Add the sliced butter to the crumble mixture and mix it until butter nicely incorporates with the mixture. Add 2 tablespoons of water and take a fork to mix and make smooth dough. When you find dough is moist enough to deal then squeeze it using your palm or a spatula then shift this to a parchment paper. You can sprinkle a little water on the parchment paper before you place the dough to keep it moist.
Fold the dough on itself for several times then divide into 2 equal pieces and pat each of the pieces to make 3/4 inch of thick. Roll the each piece from the one side of edge like a wheel to make a smooth roll. Now wrap this in a plastic and shift to a refrigerator for 30 minutes.
Making the filling
Preheat your oven to 425 degrees F.
Take 9 inches of pie pan and grease it with olive oil so it doesn't stick to the base.
Take a mixing bowl and add sliced apple pieces and lemon juice. Combine them nicely.
Take a small bowl and add all purpose flour, cornstarch, kosher salt, sugar and all the spices. Whisk it gently until everything combines well. Now sprinkle this mixture over the apples evenly and toss it so it gets nicely coat on the apple pieces. Stir in the vanilla extract and boiled cider but it is optional to use. You can skip to use the vanilla and boiled cider.
Roll the pastry into 13 inches of circle and shift this directly to the prepared pan. Trim the edges of the pastry so it doesn't overlap the rim of pan.
Spoon the apple filing to the pan and dot the top with sliced butter.
Take the rest of the pastry and roll out to 11 inches of circle. Shift this pastry over the apple pieces. Make a beautiful crimp by overhanging the bottom crust up and over the top crust. Seal them gently and prick the curst using a fork so steam can get out when necessary.
(For making it crunchier you can brush the top crust using milk or white beaten egg and sprinkle evenly all over.)
Crimp the edges of the pie and transfer this to a refrigerator for next 10 minutes so the pie firm nicely.
Take a parchment lines baking sheet and shift the pie onto it. Place it to the oven and bake it for next 20 minutes. Now, set the oven to 375 degrees F and a for another 40 minutes or until you see the bubbles from inside of the pie. Make sure to cover the edges using a foil to brown the pie easily.
There will be bubbling vigorously and that is the sign of the doneness of the pie. Remove the pie instantly from the oven and let the pie cool down before you slice and serve. This will help the filling to thickens and join the pie for a great taste.
Slice and serve the pie! If there is leftover, cover and shift this to a refrigerator for further use.
If you want to make salty rosemary caramel apple pie then you can follow all the steps as above but omit the use of butter and sugar to make the filling and use salted rosemary caramel sauce as toppings. Baking time and every other thing will be as it is.
