  • 2 large white eggs
  • 2 fresh red tomatoes sliced
  • Grated parmesan
  • Non stick cooking spray
  • 1 tsp oil extra virgin
  • 1 spring onion chopped
  • Finely chopped handful parsley
  • Ground black pepper


  1. Take a bowl and add oil, tomatoes and half of parsley leaves and toss them to mix.

  2. Take another bowl and broke the eggs into followed by spring onion and ground black pepper. Now use a spoon and whisk them together for a minute.

  3. Use a non stick pan and spray it using Nonstick cooking spray on medium flame. Now pour the eggs and swirl and spread it over the pan so it becomes thin instead. When the edges of omelette will be cooked it will become a little firm and start leaving the sides.

  4. Using a spoon or fork push the sides to the centre over the uncooked eggs. Do it for a little unless the centre egg is almost half cooked.

  5. Now gently flip it over and cook the other side for a minute. The other side always takes half of the time than first half since it is already half cooked.

  6. Now, shift it instantly to the serving plate and place the tomatoes over half of the omelette and fold and cover the other half now. Sprinkle with a little pepper and half of the remaining parsley.
