  • Pomegranate seeds for garnishing

Instructions

  1. If you can find fresh lamb loin chops then we are good to go but if you are using stored lamb loin chops then first let it sit for at least 30 minutes prior to make this dish. If stored in refrigerator take it out and wait until it comes to room temperature.

  2. Take a small bowl and add 1/2 tsp of black pepper, kosher salt, 3 tablespoon olive oil and minced garlic. Mix it gently to make a fine and smooth paste. Now, rub this paste over lamb loin chops evenly on each side.

  3. Take a large skillet and heat 1 tablespoon of oil until it comes to nice heat. Shift the lamb loin chops to the skillet and on high flame cook it for next 3 to 4 minutes on each sides. You may need a splatter screen at this stage.

  4. Now, reduce the flame to low and flip the lamb loin chops and on one side cook for next 5 to 6 minutes then again flip and cook for another to 6 minutes on the other side. Now, take the skillet off the flame. Let the chops be in the skillet, cover it with lid and let it sit in the skillet for next 15 minutes.

  5. Now after 15 minutes figure out if the lamb loin chops are cooked properly. You can see the chops to turn into pink color and when you cut the chops using a knife in the centre it wouldn't be raw anymore. It is easy to check with a thermometer if the internal temperature is 145 F.

  6. If the lamb loin chops is still raw then cover it with a lid and cook it for another 10 to 12 minutes on medium flame or until it is completely cooked. Now, shift it to a serving plate. Garnish with the finely chopped parsley. Also, garnish it using pomegranate seeds over the lamb loin chops.
