Ingredients

For rubbing the lamb

  • Peeled 16 cloves of garlic
  • 1 1/2 tablespoon of paprika powder
  • 1/2 cup of olive oil
  • 2 tablespoon of dried oregano
  • 2 tablespoon of mint flakes
  • Juice of 2 lemons

For the recipe

  • 4 lb leg of lamb
  • Kosher salt
  • Black pepper
  • Olive oil
  • Peeled and sliced 6 cloves of garlic
  • 2 cups of water
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika powder
  • Peeled and cut 8 potatoes
  • Peeled and cut 1 onion
  • Parsley for garnishing

Instructions

  1. If you have stored your leg of lamb in the refrigerator take it out and sit it until it comes to room temperature. (One hour is a perfect time.) In the meantime, you can prepare the ingredients.

  2. To make the lamb rub, take a food processor and add cloves of garlic, paprika powder, olive oil, dried oregano, mint flakes and lemon juice. Combine them gently and make a fine and smooth rub paste of it. Now, transfer it to a bowl and set it aside for further use.

  3. Now, take the lamb and do a few slits on each side. Now sprinkle some salt and black pepper evenly on each side of the lamb.

  4. Take a wire rack and shift the leg of lamb onto wire rack and take it to the top of the oven. This way the wire rack will be very close to the broiler. Now, let it cook for 6 to 7 minutes. Flip and cook the other side for another 6 to 7 minutes. Check closely if it is seared. Take the wire rack out of the oven and set the oven to 375 degrees F.

  5. When the lambs come to normal temperature and insert the garlic pieces into the slit. Now, take the lamb rub that you already have prepared and rub it on each leg of lamb evenly on all sides.

  6. Take a toasting pan with an inside rack and place the lamb on it. In the bottom add 2 cups of water.

    Take the slice potatoes and onions and sprinkle garlic powder, salt, and paprika powder evenly. Shift this to roasting pan with leg of lamb.

  7. Cover the roasting pan using a foil paper or aluminum paper and shift it to the oven that is ready with 375 degrees F. let it roast for 1 hour then uncover it and take it back to the oven again and roast it for another 12 to 15 minutes or until lamb temperature reaches to 140 degrees F.

  8. Take the roasting pan out of the oven and let it sit for next 30 minutes or until the leg of lamb come to normal temperature.

    Shift this to a serving plate and garnish with the fresh chopped parsley. You can pair this recipe with rice if you cook the rice alongside.
