Ingredients

  • 2 1/2 lb apples
  • 2 tbsp unsalted better
  • 1/4 tbsp ground allspice
  • 1/2 tbsp ground cinnamon
  • 1/4 tbsp kosher salt
  • 1 tbsp sugar
  • 2 tbsp all-purpose white flour
  • 2 tbsp cornstarch
  • 1 tbsp apple cider vinegar
  • 1 recipe for all-purpose pie dough
  • 1 egg (lightly beaten)

Instructions

  1. Melt the butter in a large sauté pan over medium-high heat. Add apples to the pan and stir occasionally coat them with butter. Whisk all of the spices together and sprinkle over the pan, stirring until they are thoroughly combined. Lower the heat and cook until the apples begin softening (about 5-7 minutes). Sprinkle the flour and cornstarch over the apples and continue cooking for about 3-5 more minutes. Remove the pan from heat, adding apple cider vinegar. Scrape the fruit mixture into a bowl and let it cool completely.

  2. Put a large baking sheet on the middle rack of your oven and preheat to 425 degrees Fahrenheit. Take out just one disc of dough from the refrigerator and roll it out onto a lightly-floured surface until it is about 12 inches wide. Stretch the crust into a 9” pie plate, making sure to leave approximately half an inch hanging over the sides. Put the place with the dough in the freezer.

  3. Roll out the rest of the dough onto a lightly-floured surface until it is about 10 to 11 inches wide.

  4. Take the pie crust out of your freezer and put the pie filling into it. Cover the remaining dough. Crimp the edges of the dough using a fork. With a sharp knife, cut three or four slits in the top of the crust (they will act as a steam vent).

  5. Place the pie in the oven on a hot baking sheet for 20 minutes, reducing the temperature to 375. Continue cooking until the inside being bubbling and the crust turns golden brown.

Recipe Notes

All spice and cinnamon are two key ingredients in any homemade apple pie filling, and I personally think you only need ¼ teaspoon and ½ teaspoon of each respectively. Some people really go overboard on the quantity of their spices, but in my opinion doing that can result in too strong of a flavor.

 

The apple cider vinegar is another key ingredient, and it’s actually one that not every homemade apple pie recipe calls for.

 

When you are making homemade apple pie filling, it is best to use about 2 pounds of apples, though this recipe calls for 2 ½ just for good measure. One of the keys to a solid homemade apple pie recipe is to keep things simple, which I’d like to think I have done here.
