Ingredients

  • 8 lamb rib chops
  • 1/4 cup of olive oil
  • 2 tbsp of fresh rosemary
  • 1 tbsp of fresh chopped basil leaves
  • 2 minced cloves of garlic
  • Zest of a lemon
  • 1 tbsp of chopped thyme
  • Black pepper
  • Kosher salt

Instructions

  1. Take a bowl and add chopped basil leaves, chopped thyme, chopped rosemary, minced garlic, olive oil, 1/2 tsp of black pepper, 1 tsp of salt and zest of lemon. Mix it well.
  2. Now, take one by one lamb chops and dip into the mixture to coat evenly on each part of the lamb chops. Once done with all the chops shift it to refrigerator to marinate for 4 hours. If you are in hurry then let it marinate for at least 30 minutes.

  3. Preheat the grill for medium-high flame.

  4. Now, onto the grill grates shift the lamb chops and let it cook for 5 minutes then flip the other side and let the other side cook as well for 5 minute. Now, you can flip again and cook for one minute and cook the other side as well for a minute.

    (You may flip again and cook for a minute to both the side if not properly cooked.) If the chops temperature reaches to 145 to 155 it means it is perfectly cooked now.

  5. If it has come to your desired doneness then take the lamb chops off the flame. Now use a foil and make a tent over the grilled lamb chops and let the meat rest for 5 to 6 minutes. This way it becomes tender and comes to eatable temperature.

    Serve it with your favorite side dish or any of the grilled vegetables that you like.
