Ingredients for kabob marinade

  • 2/3 cup of olive oil divided
  • 1 tablespoon of ground paprika
  • 1 tablespoon of thyme
  • 1 1/2 tablespoon of oregano
  • 5 cloves of minced garlic
  • 1 teaspoon of lemon juice
  • Kosher salt
  • Ground black pepper

Ingredients for making kabobs

  • 3 pieces of boneless chicken cut into 1 inch cubes
  • 2 red bell peppers
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red onion


Method to marinate

  1. Take a small bowl and add half of all the ingredients of marinade. (Add to the bowl half of everything. olive oil ground paprika, thyme, oregano, minced garlic, lemon juice, kosher salt and ground black pepper. Mix it well. Reserve the remaining half of all the marinade ingredients in another bowl.

  2. Use a ziplock bag and add the chicken pieces into it then pour the marinade over the chicken evenly. Now, shift this to a refrigerator to marinate for next 30 minutes and for better result marinate it for next 3 to 4 hours.

  3. Now, take the reserved marinade ingredients and add this to another ziplock bag with the vegetables. Shift this to a refrigerator to marinate for next 30 minutes and for better result marinate it for next 3 to 4 hours.

  4. In the meantime you can soak your wooden skewers in water for 30 minutes. This will let the cooking process go easy and it will also be easy to handle the ingredients in and out of the skewers.

Method to make shish kabob

  1. Dealing with one skewers at a time, thread vegetables and chicken chunks into the skewers while have some room at the end of every skewers so you can easily flip and cook the kabobs.

  2. On medium high heat spray the grates of your indoor or outdoor grill lightly with the help of little oil. Now place the skewers having space among them and grill it for next 5 to 6 minutes from one side then flip and turn the other side to cook for 5 to 6 minutes.

    (To check the doneness look at the centre and it shouldn't be pink.)

  3. In case, you want to use an oven to prepare this dish, you can!

    Preheat your oven to 425 degrees F and place the skewers on roasting racks on a baking sheet. Simply bake it for next 12 to 15 minutes to both the sides.
    Garnish it with chopped cilantro leaves and serve it hot.
