Ingredients

  • 10 oz or 350 gram of dried spaghetti
  • 1 tbsp virgin olive oil
  • 6 oz or 200 gram of primo bacon shortcut rindless sliced
  • 3 crushed garlic cloves
  • 2 white eggs
  • 2 egg yolks
  • Kosher salt
  • Fresh cream
  • 25 ml or 1/4 cup of wine
  • 1/2 cup of grated parmesan
  • Parmesan very finely grated for adding to plate

Instructions

  1. Take a saucepan and add water and salt to boil. Add pasta and cook it properly as directed on the packet. Now, drain the water and shift the pasta into a bowl.

  2. Take a frying pan and add bacon to cook and stir in between on medium flame. Cook it for 5 minutes or until the color change to golden brown. Mix the garlic to the mixture and cook and stir for 1 minute.

  3. Now join the white wine of your choice with pasta and cook and simmer for 2 minutes so the liquid completely evaporated from the pan.

  4. Take a bowl and add yolks, white eggs, parmesan and cream. Whisk it nicely for a minute. Check for seasoning.

  5. Turn the flame on low. Cook and toss for a minute or until it turns to thicken creamy sauce. Now use finely grated parmesan to use as toppings.
