Ingredients

  • 3 Lbs or 1400 gram of russet potatoes
  • 1 sticks of unsalted butter
  • 2 tbsp of unsalted butter
  • 3/4 cup of heavy cream
  • 3/4 cup of sour cream
  • 1/2 inch of garlic minced
  • Kosher salt
  • 1/2 tsp of paprika powder
  • Parmesan cheese (optional)
  • Parsley to garnish

Instructions

  1. Peeled the potatoes and cut them into large size cubes. Use a medium size pot and fill it water then add the potatoes making sure that potatoes are covered with the water. Add water, if requires.

  2. Add a pinch of salt and wait until it nicely boils or fork tender. Usually takes 15 minutes to complete on low flame. Drain the water and wait until the potatoes come down to room temperature. Make sure no potatoes remain with moist.

  3. Heat a pan on low flame and add 1 stick of unsalted butter. Add the minced garlic and stir fry until the rawness smell goes out of it and it is nicely roasted.

  4. Add salt, black pepper, heavy cream, paprika powder and sour cream. Mix it nicely and gently cook until everything mixes well. Turn off the flame. Wait until everything cools down.

  5. Use a hand blender or mixer and add all the ingredients. Blend it so all the ingredients are completely incorporated. Make sure that potatoes become fluffy and smooth. You can beat them separately and then mixes with other ingredients for a better job to be done.

  6. Check for seasoning.

  7. Shift it to a serving plate. Add reserved unsalted butter on top and sprinkle chopped parsley leaves over top nicely.
