Ingredients

For making the red chutney

  • 2 oz or 3/4 cup of fresh grated coconut
  • 4 dry red chillies slit and seeds discarded
  • 1 inch of grated ginger
  • 1 small onion very finely chopped
  • Water as required
  • Salt to taste

For tempering the red chutney

  • 1 tsp of husked black gram
  • 1 tsp mustard seeds
  • 2 tbsp coconut oil
  • 18 curry leaves
  • 2 tbsp of finely chopped small onion

Instructions

  1. Use a grinder or a food processor and add grated coconut, dry red chilies, grated ginger, and chopped onions in a small grinding jar. Add salt and little water as required to make a fine paste. In this step before you make a fine paste of the ingredients. Roast the ingredients in a frying pan on low heat. Also you can sauté the ingredients using coconut oil on medium flame.
  2. Now, once you have made a fine paste of chutney using grinder/food processor. Sift the chutney to small bowl and set it aside.


  3. Take a small pan and heat 1 tablespoon of coconut oil or any vegetable oil on medium flame. Add 1 tsp of mustard seeds and wait until it splatters. Add 1

    If you are after real south Indian red chutney then you must use coconut oil throughout the recipe. Besides, in north India people hesitate to use the coconut oil.

    I would suggest you to fry the chutney ingredients for a wonderful taste and aroma. You also add minced or chopped garlic with this red coconut chutney recipe.

    tsp of husked black gram and on medium flame roast it for 3-4 minutes or until it turns dark golden in color. Stir occasionally.


  4. Now, add 18 curry leaves and 1 tbsp of chopped onions. Mix it gently and stir and fry the onions on medium flame so it becomes translucent or turns light golden in color.
