- 1 1/2 lbs or 600 gram boneless chicken
- 2 bell pepper (1 red and 1 green)
- 1 medium-sized onion
- Olive oil
- Kosher salt
- Black pepper
- 3 tablespoon of olive oil
- 2 tablespoon of lemon juice
- 1 tablespoon of vinegar (apple cider)
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
- Green oregano
- 1/2 teaspoon of garlic powder
- Black pepper
Cut chicken pieces, bell pepper into 1.5 inches thick cubes or of your desired shape and put them in different bowl. Cut the onion into bite sized pieces and also ready all the ingredients.
Take all the vegetables into a bowl and pour 1 tbsp of olive oil and sprinkle some salt and pepper on top of the vegetables.
Take all the ingredients in a large bowl and whisk them together. Add the cubed chicken pieces into the marinade bowl and toss them or using a spoon gently coats the marinade onto the chicken. Cover and shift the bowl to a refrigerator for 30 to 40 minutes.
Bring the large bowl out of the fridge and sit it until it comes to normal temperature.
Use six or alternatively less or more you have wooden/metal skewers and add chicken cubes and vegetables. Repeat the process this until you finish with all the chicken pieces and vegetables.
Heat your grill on medium-high flame and add the skewers over it. Cook it for next 10 minutes or until it start looking light golden in color. Flip and grill the other side as well for another 10 minutes. For crisper taste you can grill both sides from here again for another 1 to 2 minutes.
You can use a meat thermometer to check the doneness. Using meat thermometer if you find chicken comes to 165 degrees internally it means it is well cooked.
Serve it hot with your favorite sauce or side dish.

If you are using a meat skewers then it is very important to soak them in water 30 minutes prior to make this recipe. It can be metal or wooden skewers, depends on what you have at home.
Marination process is super simple so you should not hesitate to go with that and it needs very simple and easy ingredients that you might have in your kitchen. The marinade is commonly known as Greek marinade that as super delicious in taste.
It is very necessary to marinade the mixture only for 30 to maximum of 40 minutes because over marinating can bring the dish to very mealy texture and sourness in taste.
If you go for grilling over medium-high flame, then it is almost perfect for grilling and you can check the doneness using a thermometer. If the chicken internally comes to 165 degrees then it is fully done.
