- 4 pieces of boneless chicken breasts
- 4 tablespoons of brown sugar
- 3 cloves of garlic minced
- Black pepper
- Kosher salt
- 4 tablespoons of soy sauce
- 2 tablespoons of pineapple juice
- 1 tablespoon of cornstarch
- 1 medium-sized red bell pepper
- 1 medium-sized red onion
- 2 cups of pineapples
- 1 yellow red bell pepper
- 1 green red bell pepper
- Green onion to garnish
Wash the boneless chicken breasts then wash it using kitchen towel and chopped the chicken breast into 1 inch cubes.
Cut the red bell pepper, yellow bell pepper, green red bell pepper, red onions and pineapple into 1 inch cubes and set it aside.
To prepare marinade, take a small bowl and add pineapple juice, black pepper, minced garlic, brown sugar, kosher salt and soy sauce. Mix it well.
Now in the same small bowl add cornstarch and a little water and whish everything together until it turns a soft and tender batter.
Take this marinade mixture to a pan and on medium flame bring it to boil and cook it until the marinade mixture turns thick and find a soft texture. Take the pan off the flame and reserve 1/4 of prepared marinade mixture for garnishing at the end.
Now take skewers and insert chicken, red bell pepper, yellow bell pepper, green red bell pepper, red onions and pineapple having some rooms at the end of skewers so it gets easy for you to flip and cook on grill.
Now take one skewers at a time and roll in the prepared marinade so everything on the skewers get nicely coated with the marinade. Do the same with rest of skewers. Transfer the skewers to a refrigerator and let it marinate for at least 30 minutes and for better result marinate it for 3 to 4 hours.
Now, take the skewers out of the refrigerator and let it sit for 10 to 15 minutes until it comes to normal temperature.
Now, transfer the skewers to a grill and on high flame cook it for 2 minutes then flip on the other side. Do this for next 20 minutes until chicken gets cooked inside out.
Remove the skewers from grill and transfer it to serving plate. Finally, garnish the kabob with the reserved sauce and chopped green onions.
