  • 1 1/2 lbs or 300 gram of boneless chicken
  • 1 cup of chickpeas
  • 6 cloves of garlic chopped
  • 4 pieces of green chillies slit
  • 1 tablespoon of ginger grated
  • 6 white eggs
  • 1 inch cinnamon stick
  • 6 pieces of cloves
  • 1 tsp carom seeds
  • 8 pieces of black pepper
  • 4 dried red chillies
  • 1 tsp of ground red chilli
  • 2 tsp of cumin seeds
  • 3 tablespoon of mint leaves
  • 3 tablespoon of coriander leaves
  • Cooking oil as required
  • Salt to taste


  1. Take a medium-sized pan and heat chickpeas on medium flame. Sauté until the chickpeas turn tender. Once the chickpeas turn tender and soft shift this to a bowl and grind it make a fine powder. Now set it aside.

  2. In the same pan add plenty of water with boneless chicken pieces, cinnamon, cumin, cloves, black pepper, red chilies and carom seeds. On low medium flame simmer it until chicken pieces are gently cooked.

  3. When the chicken pieces are cooked transfer it to a large mixing bowl. Add chickpeas fine powder, 3 pieces of egg whites with coriander leaves, mint leaves, grated ginger, green chilies and minced garlic. Mix it well using a spatula until it comes to soft thick dough. Press the mixture hard using opposite side of the spatula.

    (Pressing the mixture helps to have a soft dough that will make crispier kebabs)

  4. Roll the mixture and make balls from the dough into your desired shape of kebabs. Make the balls into round shape.

  5. Take a small bowl and add rest of the 3 egg whites. Whisk it well.

  6. Take a medium-sized pan and heat oil on medium flame. Now, dipping each kebab ball into the egg whites shift them to a pan. Flip it until they turn golden brown in color and get crispiness on the top and bottom layer. Cook the rest of the kebab in the same fashion.

    Transfer the kebabs to a serving plate and serve it hot with your favorite chutney recipe.
