  • 2 lbs or 900 gram of Maris Piper potato
  • 3 oz or 100 gram of goose fat
  • 2 teaspoon of flour
  • Salt to taste


  1. Take a large roasting tin and place this to the middle of the oven and preheat the oven to 200C/fan and 180C/gas 6.

  2. Rinse and wash the potatoes in the running water then peel the potatoes and cut into 4 pieces each. Shift the potatoes to a large pan full of water and mix a pinch of salt to the water.

  3. Take the pan to the flame and on high heat and wait until it comes to bowl. Turn the flame to low and simmer it uncovered for 3 to 4 minutes.

  4. Take a hot roasting tin and add the 3 oz of goose fat. Let it bake for a few minutes in the oven until it becomes very hot.

  5. Drain out the water and shift the potatoes to a large pan and add flour then shake it well so the potatoes get nicely coated.

  6. Shift the potatoes to hot fat until they get nicely sizzled. Toss the potatoes so it gets evenly coated. Spread the potatoes in single layer and have enough room among the potatoes. Let the potatoes roast for 30 minutes. Flip the potatoes in between half of the time so both the side baked well.

  7. Bake the potatoes in the oven for another 10 minutes so it becomes golden in color and get crispiness. Then finally scatter with the salt and serve it hot.

If you really after crispy potatoes then add the potatoes to the goose fat or olive oil when it is very hot.
