Ingredients

  • 500 gram or 1 lb of chicken
  • 750 gram 1 3/4 lb of basmati rice
  • 6 medium sized chopped onions
  • 200 gram or 1/2 lb of clarified butter or ghee
  • 100 gram or 1/4 lb of yoghurt
  • 100 ml or 1/3 lb of ajinomoto
  • 4 pieces of cloves
  • 4 pieces of green cardamom
  • 1 inch of cinnamon
  • 1 tsp of whole cumin seeds
  • 5 pieces of green chillies
  • 1 bowl finely chopped mint leaves
  • 1 bowl finely chopped coriander leaves
  • 2 tsp of garam masala powder or allspice powder
  • 2 tbsp of ginger paste
  • 2 tbsp of garlic paste
  • 2 tbsp chopped fenugreek leaves
  • 2 tbsp of red chilli powder
  • 1 tbsp of coriander powder
  • 1 tbsp of cumin powder
  • 1 tbsp of turmeric powder
  • A pinch of saffron soaked in 2 tablespoon of water
  • 2 pinch of eatable color powder or paprika powder
  • Salt to taste

Instructions

  1. Use a mixing bowl and add washed chicken pieces with ajinomoto, lemon juice, ginger paste, garlic paste. Mix it gently so the chicken pieces get nicely coat of the marinade. Now shift it to a refrigerator and let it marinate for 45 minutes or overnight for better result.

  2. Take a large bowl and heat it on medium flame. Fill it with 4 cups of water and add rice to it. Once the water starts come to boil turn the flame to low and cook the rice for next 5 minutes and take it off the flame. Drain the water and let it sit until it cools down on a large plate spreading the rice evenly.

  3. Take the chicken 30 minutes out of the refrigerator prior to cook. Heat oil in a pan and on medium high flame add chicken pieces and fry until it turns light golden brown in color. Fry in batches so chicken get nicely cooked inside out. Transfer the fried chicken to a towel paper to absorb the excess oil.

  4. Discard the oil from pan and remain only 2 tablespoon of oil in the same pan. Add the chicken pieces followed by mint leaves, coriander leaves and fenugreek leaves and mix it for 10 seconds. Now add coriander powder, cumin powder, turmeric powder, red chilli powder and garam masala powder or allspice powder. Now, mix everything well and fry for 2 to 3 minutes on medium flame.

  5. Use a pressure cooker and heat 3 tablespoon of oil on medium flame. Add the chopped onions and fry it for next 5 to 6 minutes until it turns golden brown in color or translucent. Shift this to a towel paper so it absorbs the excess oil.

  6. Take a large pan and add fried onions with fried chicken with spices. Mix it gently then add yoghurt, 1/2 tablespoon of oil, a little warm water and saffron soaked in warm milk. Mix it gently, cover and cook for next 5 minutes.

  7. Take a pan and heat on medium flame. Once the water starts to boil add the cloves, green cardamom, cinnamon and cumin seeds. You can use these spices after crushing them. Now shift the rice to the pan and cook it for 2 minutes.

  8. Now take upper layer of the rice and spread it on the chicken then take second layer of the rice and spread it on the chicken bowl again. Do this until you finished with layering all the rice over chicken. Above the rice add the saffron soaked in milk, eatable color and clarified butter. Now cover and close using the lid and simmer it for next 10 minutes.

    Chicken biryani is ready to serve with the hot chutney or raita of your choice.
